Veg Biryani with Biryani Masala

Method
Rice Preparation
Cook soaked basmati rice until 70% done with whole spices and salt. Drain and set aside.
Sauté Aromatics
Heat oil or ghee in a heavy-bottomed pot. Saute onions until golden brown. Add ginger-garlic paste and saute until the raw smell disappears.
The Spice Infusion
Add the chopped vegetables and cook for 5 minutes. Stir in 2 Tbsp Dr Advice Biryani Masala and 1 Tbsp Mirch Masala. Mix well with mint-coriander paste.
Layering & Dum
Layer the partially cooked rice over the vegetable masala. Top with fried onions, mint, coriander, and saffron water. Seal the pot and cook on low heat for 15 minutes.
Final Touch
Once done, let it rest for 10 minutes. Fluff gently with a fork from the sides and serve hot.
